Abstract:
PURPOSE: To provide pies with high workability by rolling out the dough of pie even at the temperature to hardly roll out natural butter by using natural butter, in which the specified quantity of starch is mixed, to be kneaded into the pie. CONSTITUTION: Concerning the natural butter to be kneaded into the pie, the butter, in which the starch is previously mixed from 5wt.% to 50wt.%, preferably, from 10wt.% to 30wt.%, is used. In this case, wheat starch is preferable as this starch.
