Abstract:
PROBLEM TO BE SOLVED: To provide a method for producing a food material with an increased γ-aminobutyric acid content by which the food material can widely be utilized as a main raw material for various kinds of daily foods and a sufficient amount of the γ-aminobutyric acid can be ingested without causing a higher cost of the final product. SOLUTION: This method for producing the food material with the increased γ-aminobutyric acid content comprises a step of making a separately prepared proteolytic enzyme coexist in one or more kinds of crushed materials of grains and holding the crushed materials under conditions in which the enzyme exhibits the activities.
