Abstract:
PROBLEM TO BE SOLVED: To provide a method for processing a liquid food suitable for efficiently and effectively reducing the dissolved oxygen concentration of a liquid food having a high foaming tendency and a low defoaming tendency, as exemplified by defatted milk.SOLUTION: The dissolved oxygen concentration of a liquid food is reduced by: charging the liquid food into a decompression container in a state of heating to a temperature equal to or more than a saturation temperature (boiling point) of the liquid food in a decompression atmosphere in the decompression container; or charging the liquid food into the decompression container in a state of decompressing the decompression container to equal to or less than a saturation vapor pressure of the liquid food in the temperature of the liquid food.
