Abstract:
PURPOSE: To suppress deterioration (whey off or separation of an aqueous phase) in quality of a cream during refrigeration and storing at ordinary temperature and enhance the keeping quality thereof by preparing the cream and then subjecting the resultant cream to high-pressure treatment.
CONSTITUTION: A cream is prepared by a conventional method, then subjected to high-pressure treatment under preferably ≥1000kg/cm2 and modified.
