To provide a method for preparation of very fine starch particles.
The method for the preparation of starch particles in a 2-phase system includes steps of (a) preparing a first phase containing a water dispersion system of starches, (b) preparing a second liquid phase containing the dispersion system or emulsion of the first phase therein, wherein the second phase is not water, (c) crosslinking the starches present in the first phase, and (d) separating the starch particles prepared in this way. The second phase is a hydrophobic phase. In the step (b), oil in water emulsion is formed which is subsequently reversed to water in oil emulsion. In the step (c), the second phase includes a nonsolvent of the starch that is miscible with water. The starch particles having a very small size can be controlled by this method.
