Abstract:

To provide a method for extracting an active ingredient of onion in a large amount, the large amount of the active ingredient of the onion obtained by the method, and a hygienic food for patients with diabetes mellitus, consisting of the active ingredient of the onion as a main component.

This method for preparing the active ingredient from the onion by harvesting a raw bulb of the onion, washing with water, peeling skin off, crushing to a prescribed size comprises (a) a process of squeezing the onion by a compression or centrifugal separation, (b) a process of concentrating the squeezed liquid of the onion obtained in the process (a) by concentrating under a reduced pressure to obtain the components of the onion, (c) a process of collecting the distilled fraction in the concentration under a reduced pressure, (d) a process of adding the collected fraction in the process (b) to the components of the onion obtained by the process (b) and mixing them.
