Abstract:
PROBLEM TO BE SOLVED: To provide powder isinglass from which a fat portion is removed effectively, and to provide a preparation method thereof.SOLUTION: A preparation method of isinglass from a bladder of a sturgeon includes steps for: (a) cleaning the bladder of the sturgeon; and (b) putting the bladder cleaned in the step (a) into a low-temperature drier, and drying the bladder at 60°C or lower by being irradiated with a far-infrared ray, to thereby perform defatting so that the fat content becomes 0.5-1.5%.SELECTED DRAWING: None
