Abstract:
To provide a novel method of preparing a steviol glycoside in which a saccharide other than glucose is transferred.SOLUTION: Provided is a method for preparing a transfructosylated steviol glycoside. The method comprises a step of reacting sugar with steviol glycoside in Arthrobacter-derived microorganisms, a culture thereof, a supernatant of the culture, an extract of the culture, and a lysate of the microorganisms.EFFECT: The transfructosylated steviol glycoside according to the present disclosure is a material for a high-intensity sweetener having an improved bitter taste and of which the caloric content is not high compared to a known transglucosylated steviol glycoside, and can thereby be used in various fields.SELECTED DRAWING: None
