Abstract:
PURPOSE: To enable a long period storage of the raw eggs of poultry such as chicken eggs, quail eggs or duck eggs by spraying a specific fatty acid glyceride on the surface of a raw egg.
CONSTITUTION: A composition containing 0.001-5.0wt.% of a fatty acid glyceride of the formula (R1-R5 are 5-21C straight chain aliphatic hydrocarbon) as a main component, preferably 0.001-5.0wt.% of a 12-22C aliphatic acid and further 50-20000wt.ppm of an antiseptic agent and/or an antifungal agent is sprayed on the surfaces of raw eggs.
