Abstract:

PURPOSE: To effectively prevent the production of disulfide compounds in an aqueous solution and further prevent the oxidation of methylmercaptopropionylproline by adding an oxidation-preventing agent to an aqueous medium containing methylmercaptopropionylproline.

CONSTITUTION: An oxidation-preventing agent such as ascorbic acid (derivative) or sulfurous acid (salt) is added preferably in an amount of 0.05-2wt.% (based on an aqueous medium) to the aqueous medium containing N-(D-α-methyl-β- mercaptopropionyl)-L-proline of the formula to prevent the oxidation of the N-(D-α-methyl-mercaptopropionyl)-L-proline.
