To provide a method for processing tea leaves for enabling tea leaves to maintain by themselves tannin or catechin at a fixed quantity or above.
This method for processing the tea leaves comprises a first processing step of steaming tea leaves grown by blocking out sunshine for a fixed period, and cooling the steamed tea leaves followed by drying to produce crude tea, and a second processing step of refining, drying and pulverizing the crude tea to finish to powdered tea. The powdered tea having the fixed quantity or above of tannin or catechin is obtained by measuring at least the quantity of tannin or catechin of the crude tea, and blending plural kinds of the crude tea based on the measurement result. The blend is performed during the second processing step.
