Abstract:

To provide a method for processing young leaves of rice or various kinds of wheat/barley so as not to impair the nutrients inherent therein and thereby to ensure the nutrients to be efficiently taken as supplements or foods.

This method for processing young leaves so as to inhibit the destruction, or the like, of the active ingredients inherent therein comprises the following steps: washing step (step n3) for washing reaped young leaves, preliminarily drying step (step n6) for drying thus washed young leaves, and far-infrared drying step (step n8) wherein the thus preliminarily dried young leaves is subjected to far-infrared rays in a medium-temperature ambience and dried until a specified moisture content thereof is attained.
