Abstract:
PROBLEM TO BE SOLVED: To provide a method for producing a milk-containing acidic drink, by which a milk-containing acidic drink, a low calorie milk-containing acidic drink, a milk-containing acidic drink containing, for example, a juice, a vegetable juice, or the like, which sufficiently inhibit the coagulation and precipitation of suspended milk protein particles, have good flavors and have excellent long period storage stability, can easily be obtained.
SOLUTION: This method for producing the milk-containing acidic drink, characterized by adding a sour agent to a mixture containing milk and soybean edible fibers and not containing pectin to obtain the primary mixture having pH 3.0 to 4. 2, adding at least pectin to the primary mixture, and then homogenizing the obtained secondary mixture.
