Abstract:
To provide a method of producing an alkyl-etherified saccharide wherein asymmetrical dehydration etherification selectively and highly efficiently proceeds without cutting a sugar chain.
The method of producing the alkyl-etherified saccharide comprises subjecting a saccharide and a compound having a hydroxy group in its molecule to dehydration condensation in the presence of a catalyst and a solvent in carbon dioxide in a supercritical state.
