Abstract:
To provide an improved method for producing an amino acid, a 3- substituted L-alanine or salt thereof, using an enzyme through enhancing its stability to suppress its deactivation to maintain the high yield of the final product even without using a large amount of the enzyme.
This method for producing a 3-substituted L-alanine as an amino acid comprises subjecting the corresponding 3-substituted 2-oxopropionic acid, the enol modification thereof or a salt thereof to enzyme action in the presence of an amino group donor; wherein the enzyme is made to act on the reactant in the presence of a metal sulfide or hydrogen sulfide.
