Abstract:
PROBLEM TO BE SOLVED: To provide a method for producing a bread or an apparatus for producing a bread which covers the upper surface of a bread dough using a floating type lid when the bread dough is baked, and thereby can evaporate moisture from the upper surface of the bread dough.SOLUTION: A method for producing a bread includes: a rice flour arrangement step of arranging rice flour and water inside of a vessel; a first heating step of kneading the rice flour and the water while heating the rice flour and the water at a first temperature; a water immersing step of immersing the gelatinized rice flour with water; a yeast addition step of adding yeast to the rice flour which is immersed with water; a second heating step of kneading the rice flour to which the yeast is added while heating the yeast at a second temperature; a third heating step of fermenting the rice flour to produce a bread dough; and a baking step of heating the produced bread dough at a fourth temperature to produce a bread. The baking step includes arranging a floating type lid 14A above the produced bread dough, and heating the bread dough in which the floating type lid 14 is arranged at a fourth temperature.SELECTED DRAWING: Figure 1
