Abstract:

To provide a method for producing a low protein, high calory and low table salt bread by giving lipophilicity to wheat starch by using a phenomenon such that it is known that by dry-heating the wheat starch (at 120°C for 5 hr), a high lipophilicity is generated in the wheat starch, bonding oils and fats and mixing in bread dough for producing the bread for renal disease patients requiring the low protein, high calory and low table salt.

This method for producing the bread is provided by dry-heating the wheat starch (at 120°C for 5 hr), bonding the lipophilized wheat starch with oils and fats and using it for the production of the bread.
