Abstract:
PROBLEM TO BE SOLVED: To provide a method for producing a bread substrate capable of producing a bread having a quality better than that of the conventional one by adding a high temperature warmed substrate in which the starch in wheat flour is sufficiently swollen and gelatinized and gluten is perfectly modified, and a method for producing breads using the bread substrate.SOLUTION: Provided is a method for producing a bread substrate performing: a high temperature warmed substrate production step where, to 100 pts.wt. of a part of wheat flour in at least the total quantity of wheat flour, water of 201 to 1,000 pts.wt. is mixed, thereafter this mixed substrate is warmed and preserved in the temperature range of 70 to 95°C for 30 s to 5 hr to create a high temperature warmed substrate in which starch in the wheat flour is sufficiently swollen and gelatinized; and a bread substrate production step of producing a bread substrate using the high temperature warmed substrate.
