Abstract:
PROBLEM TO BE SOLVED: To provide a method for producing a bread substrate in which temperature control is easily performed, and also, capable of easily and securely producing a prepared warmed substrate having extremely reduced gluten modification, and a method for producing breads using the bread substrate.SOLUTION: Provided is a method for producing a bread substrate performing: a warmed substrate preparation step where warmed wheat flour warmed at 55 to 65°C and warm water of 201 to 1,000 pts.wt. to 100 pts.wt. of the warmed wheat flour are mixed, and further, the mixture is warmed at 55 to 65°C for 30 min to 5 hr to create a warmed substrate using bread substrate creation; and bread substrate creation preparing a bread substrate using the prepared warmed substrate.
