Abstract:
To provide a method of producing bread that is resistant to aging, voluminous and has soft and moist eating texture and good taste.
The bread is produced by using a mixture of wheat flour previously mixed with a fat or oil in an amount of 5-40 wt.% based on the total weight of wheat flour used for making bread.
