Abstract:

To provide a method for producing breads in which breads can be produced in a state in which original shape is kept, because change in physical properties is extremely slight even when chip-like oil or fat is subjected to change in temperature or physical pressure and crispy bread having good texture can be obtained.

The method for producing breads comprises dispersing a chip-like oil or fat containing an oil or fat composition obtained by crystallizing oil or fat or its emulsion under pressure into bread dough obtained by adding an adequate amount of water to raw materials such as wheat flour, yeast and oil and fat, mixing these components, carrying out steps of fermentation based on floor time, division/rounding and then carrying out baking oven treatment and heating and baking treatment. The breads are prepared according to the method.
