Abstract:

To provide a method for producing brewed vinegar, which does not impair a material feel of a raw material and has an excellent flavor, by using a general method for producing brewed vinegar, comprising saccharification of a raw material, alcohol fermentation and acetic acid fermentation.

The method for producing brewed vinegar comprises adding a fermentation assisting agent constituted of a specific component to an acetic acid fermentation process in the method for producing brewed vinegar, which comprises processes for saccharifying a starchy raw material or a saccharine raw material and subjecting a saccharified material to alcohol fermentation and then to acetic acid fermentation.
