Abstract:

To provide a method for producing cheese starter containing vitamin C and dietary fiber which are insufficient in conventional cheese and iron of small content so as to replenish the insufficiency through using available organs of animal excluding abomasum of infant ruminant, and to provide a method using the cheese starter, for producing cheese, dairy products and other products (not necessarily food) each preventing nutrient contained in cow milk from escaping into whey and highly nutritive containing all the nutrients contained in cow milk and the cheese starter.

This method for producing the cheese starter comprises using as the raw material at least one kind selected from the group consisting of mammals (excluding infant ruminant within two weeks after birth), fish and shellfish, seaweeds, fowl, vegetables, fruits, medicinal herbs and fungi. Cheese and other products (not necessarily food) each fully obtain rich components contained in fruits and vegetables.
