Abstract:

PROBLEM TO BE SOLVED: To provide a method for producing a concentrated Japanese plum juice, capable of efficiently producing a desalted and concentrated Japanese plum juice by using plum vinegar, generated as a by-product in a process for producing pickled Japanese plum from Japanese plum fruit, as a raw material.
SOLUTION: This method for producing a concentrated Japanese plum juice is characterized in that plum vinegar is evaporated and crystallized and its concentrated supernatant liquid is subjected to an electrodialysis treatment with an ion-exchange membrane.
