To provide a method of producing excellent cooked unpolished rice bread capable of adding cooked unpolished rice to bread at a high rate, preventing caving that deteriorates delicious taste, texture, and appearance, and maintaining soft texture and taste for a long period of time.SOLUTION: There is provided a method of manufacturing cooked unpolished rice bread to which cooked unpolished rice is added, the cooked unpolished rice bread preventing caving by adding, to flour configuring a bread dough, one or more kinds selected from a group consisting of wheat gluten, wheat gliadin, and powder albumen.SELECTED DRAWING: None
