Abstract:

To provide a method for producing a discolored laver processed food material, capable of producing a highly GABA-containing material using as the raw material discolored laver which is conventionally disposed of, and to provide a laver processed food material made of a highly GABA-containing material.

This method for producing the discolored laver processed food material comprises fermenting an extracted solution which is obtained by crushing discolored laver followed by dissolving in water with lactic acid bacterium having γ-aminobutyric acid producing ability. The laver processed food material is obtained by drying the food material obtained by the method followed by pulverizing.
