Abstract:

To provide a method for producing a dried fish having deliciousness.

This method for producing the dried fish comprises thawing a frozen fish in water, removing the head/guts, well boiling or steaming, and drying the fish by roasting. The method comprises regulating the time from the start of thawing to the start of well boiling or steaming to not more than 20 h and regulating the inside temperature of the frozen fish to be in the range of -3°C to 3°C between the end of thawing and the start of well boiling or steaming.
