Abstract:
To provide a method for producing the dry kail (Brassica oleracea acephala) powder having the original color and flavor of the kail.
The blanching treatment of the kail (Brassica oleracea acephala) is carried out by immersing the kail in 80 to 100°C hot water containing 3 to 50 wt.% of trehalose and, if necessary, other additives for a short time.
