To provide a method for producing an extract of chiroinositol useful as a therapeutic agent or a dietarily auxiliary therapeutic agent for diabetics and a material for general foods such as a drink, confectionery, a baked bread, an ice cake and gums from edible resources.
This method comprises a step of grinding the edible resources, adding 2-6 times of water in terms of weight ratio thereto to carry out extraction and then collecting the supernatant liquid by a centrifugal separation method or a filtration method, a step of removing proteins from the supernatant liquid by using a solvent sedimentation or an oxidation sedimentation, removing saccharides except the chiroinositol by using an adsorption column chromatography, then adding an acid to subject to acidolysis and collecting the acidolysis liquid, a step of removing salts or acids from the acidolysis liquid by sodium hydroxide or an ion exchange resin to neutralize and a step of applying the liquid in which the salts and the acids are removed to a hydrophobic column chromatography to obtain the chiroinositol fraction and then concentrating and filtering or drying the fraction.
