To provide a method for producing a fatty acid ester of a saccharide in a high substitution degree without causing degradation or discoloration of the saccharide without using an organic solvent generating smell of pyridine or the like when producing the fatty acid ester of the saccharide.

The method for producing the fatty acid ester of the saccharide involves reacting the saccharide such as starch, dextrin, cellulose, glycogen, pullulan, inulin, hyaluronic acid and β-glucan with a vinyl ester of the fatty acid in an ionic liquid comprising a combination of an inorganic or organic anion, and an organic cation such as imidazolium ion and pyridinium ion.
