To provide a method for producing a fermented food in which viable cells remain.SOLUTION: A method for producing a fermented food includes the steps of adding agricultural and marine products and viable cells to a container to ferment the agricultural and marine products, taking out the agricultural and marine products from the container after fermentation, and subjecting the taken out agricultural and marine products to vacuum freeze-drying or freezing.SELECTED DRAWING: Figure 1
