Abstract:

PROBLEM TO BE SOLVED: To provide a method for producing a fish processed product by which content of natural vitamin D3 is increased while preventing deterioration in freshness of the product.
SOLUTION: The method for producing a fish processed product comprises applying ultraviolet light to fish maintained at low temperature so as to increase content of vitamin D3. The method makes it possible to increase vitamin D3 in the fish without causing deterioration in freshness of the fish because the fish is maintained at low temperature when applying the ultraviolet light to the fish.
