Abstract:
To provide a method for producing a foaming oil-in-water type emulsion, which can materializes at least one of improvement of emulsion stability and reduction of whipping time, irrespective of a composition of the foaming oil-in-water type emulsion.SOLUTION: The method for producing a foaming oil-in-water type emulsion comprises a heat sterilization step, a cooling step, and a temperature change step. In the heat sterilization step, the oil-in-water type emulsion is heat sterilized. In the cooling step, the oil-in-water type emulsion after the heat sterilization step is cooled. In addition, multi-stage cooling may be carried out in the cooling step. Further, when multi-stage cooling is carried out in the cooling step, other treatment such as homogenization may be carried out at any stage thereof. In the temperature change step, the oil-in-water type emulsion after the cooling step is subjected to temperature change at least twice. And a temperature raising step is included in the temperature change step. In the temperature raising step, the oil-in-water type emulsion is heated up.SELECTED DRAWING: Figure 1
