Abstract:

To provide a method for producing a food / drink using a saccharide including sugar and a milk ingredient such as milk / a milk product as raw materials, by which a cooking odor produced on heating under pressurization can considerably be reduced even when a conventional technique is not applied, and a sweetener such as the sugar can be held in a state close to a non-heated state and simultaneously reduced.

This method for producing a coffee drink containing sweetened milk comprises subjecting sugar 1 and a milk ingredient 2 to electrostatic field treatments A, respectively, to obtain the electrostatic field treated sugar 3 and the electrostatic field treat milk ingredient 4, mixing G the electrostatic field treated sugar 3 and the electrostatic field treat milk ingredient 4 with a coffee extract 7 prepared by roasting B and extracting C coffee raw beans subjected or not subjected to an electrostatic field treatment 5A to obtain the mixed solution 9, and then charging / sealing H the mixed solution 9.
