To provide a method for producing a frozen fish filet of a high commercial value, having a good taste, freshness and appearance from a frozen fish meat block.
This method for producing the frozen fish filet is provided by bringing the frozen fish meat block into contact with the linear part of a rotating band saw with while twisting the fish meat block, keeping the temperature at ≤-10°C, and cutting so that at least one side surface of the cut surface shows a bent or curved surface state. The fish meat block is cut by changing the shape of the cut surface such as a flat, bent and curved surface shape, etc., optionally according to the cut parts of the fish meat block, and the fish meat block is cut so as to have the weights and cut surface areas of the filets almost the same size for each of the blocks. By cutting a part closest to the tail part of the fish meat block so that the cut surface shows a curved line shape, the weights and surface areas of the filets are made into almost the same size.
