Abstract:
To provide a method for producing a large amount of γ-aminobutyric acid without using pyridoxal phosphate known as a medicine.
A glutamic acid solution containing glutamic acid or a glutamic acid salt is mixed and reacted with rice bran and a yeast to convert the glutamic acid in the glutamic acid solution and glutamic acid in the rice bran into γ-aminobutyric acid.
