Abstract:
To provide a method for producing a hard butter composition by which a hard butter composition rich in SUS (2-unsaturated, 1, 3-disaturated triglyceride) is more easily or more efficiently produced through ester exchange via 1, 3-specific lipase.
The method for producing the hard butter composition comprises using specific high stearin-high oleic sunflower oil as main raw material to selectively introduce saturated fatty acid in 1, 3-position of the oil and fat, and not separating the oil or separating the oil to obtain fractions rich in SUS, in producing the hard butter composition rich in SUS (2-unsaturated, 1, 3-disaturated triglyceride) by ester exchange via 1, 3-specific lipase.
