Abstract:

To provide a method for producing W/O type hydrous chocolates by which molding can be carried out by cooling and solidifying in the same manner as in usual chocolate and baking residual resistance is excellent even when baked simultaneously with a dough for a baked confectionery.

This method for producing the W/O type hydrous chocolates having baking resistance is characterized by mixing one or more kinds selected from water and an aqueous ingredient with chocolates containing 35-45 wt.% of an oil ingredient.
