To provide a new method for producing an L-vinyl glycine derivative or its salt, to provide a new method for degrading L-vinyl glycine derivative or its salt, to provide a method for recovering a D-vinyl glycine derivative or its salt from a racemic vinyl glycine derivative or its salt by the utilization of the method, and to provide a catalyst agent, a degrading agent, a kit, and the like, useful for the methods.
An aminotransferase which is originated from a thermophilic bacterium, Sulfolobus tokodaii str.7, and in which an enzymatic activity for producing L-glutamic acid from L-phenyl alanine and an enzymatic activity for producing L-glutamic acid from L-leucine are ≥30 U/mg, respectively, is useful as a catalyst agent for catalyzing a reaction from a vinyl glyoxylic acid to an L-vinylglycine derivative, a degrading agent for degrading the L-vinylglycine derivative, and the recovery of a D-vinyl glycine derivative from racemic vinyl glycine derivative.
