Abstract:

To provide a layered fried food having little oil absorption, and to provide the layered fried food having an inner layer with a beautiful layered shape.

The method for producing the layered fried food includes frying a composite bakery dough obtained by combining a water-in-oil type emulsified oil-and-fat composition for rolling-in containing 25-70 mass% water, with a yeast-containing bakery dough, and subjecting the combined product to the rolling and folding operation.
