Abstract:

To provide a method for producing low-protein bread of good taste.

The wheat flour for bread dough is replaced with low-protein rice powder partially (≥ 10 %) or wholly and the rice powder is baked according to the usual bread-baking method. As quality-improving materials, are mixed a polysaccharide, dietary fiber and an oxidizing agent in appropriate amounts.
