Abstract:
To provide a macrocyclic diester having musk like aroma with small environmental load for responding the need of natural tastes which consumers desire.
The method of producing macrocyclic diester having musk like aroma includes: a step of reacting cells of a microorganism or treated product of the same with fatty acid or its ester to obtain α, ω-dicarboxylic acid; and a step of reacting obtained α, ω-dicarboxylic acid with diol to be cyclized.
