Abstract:

PROBLEM TO BE SOLVED: To produce mellow and health-promoting sweet potato vinegar having a transparent ruby color by using sweet potato and red malted rice owing to generation and mixing of a little amount of citric acid in addition to generated acetic acid.
SOLUTION: This mellow sweet potato vinegar is produced by steaming anthocyan-containing sweet potato in the whole or a part of the sweet potato inoculating red malted rice, making red malted sweet potato, mixing the obtained red malted sweet potato, adding alcohol fermentation yeast, bringing the mixture to alcoholic fermentation, adding acetic fermentation bacteria as it is or after separating lees and bringing the mixture to acetic fermentation.
