Abstract:
To provide crude oil and refined fat and oil composed of highly unsaturated fatty acids in which unsaponifiable matters and/or ester type sterol in crude oil were reduced, and to provide a method for producing the same.
In a production method of crude oil composed of highly unsaturated fatty acids in which unsaponifiable matters and/or ester type sterol in crude oil has been reduced, the method is characterized in that microorganisms producing fat and oil composed of unsaturated fatty acids are cultured in the medium with 2-15% of nitrogen sources contained in a culture tank equipped with agitating blades, in which the ratio of the agitating blades (=d) and the culture tank inner diameter (D) is d/D=0.30-0.6.
