Abstract:
To provide a method for producing milk acid curd capable of promoting the formation of its high-density three-dimensional network.
This method for producing milk acid curd comprises mixing a combination of lactic fermentative bacteria with β-glucan as a kind of polysaccharides produced by culturing polysaccharide-productive fungi belonging to the genus Aureobacidium pullulans into skim milk; wherein Lactobacillus delbrueckii subsp. Bulgaricus is used as the above lactic fermentative bacteria.
