To provide a method for producing a material modified for the improved quality of food and drink without resort to chemical treatment with chemical substance including, for example, a chemical or an enzyme.SOLUTION: A method for producing a modified food material is disclosed. The production method includes the step of heating powder of an original food material with superheated steam.
