Abstract:

PROBLEM TO BE SOLVED: To provide a method for producing modified raw milk, which aims at effectively modifying milk protein through improving reactivity of transglutaminase(TG) to raw milk such as fresh milk, and to obtain a milk product improved in physical properties or palate feeling by utilizing the thus obtained modified raw milk.
SOLUTION: The method for producing modified raw milk comprises a step of processing milk protein contained in raw milk with various kinds of reducers including thiol-based compounds or ascorbates so as to improve the reactivity of TG, wherein the reducer(s) has (have) sufficiently much effect even when added together with TG at the same time, and also even such amount of the reducer(s) added which exerts no influence on the taste of food results in attaining the object.
