To provide a method for efficiently producing modified starch having improved solubility in cold water in a short time and to obtain modified starch having extremely excellent properties produced by the production method.
The method for producing modified starch comprises treating starch by using a high-speed rotary impinger equipped with a revolving shaft, at least a one-stage rotor that has a plurality of blades and is supported on the revolving shaft, a liner that has a plurality of grooves on the inner peripheral surface and is arranged at the outside of the rotor in a state that the inner peripheral surface has a fixed gap from the outer peripheral surface and a revolving means for the rotor. The modified starch, produced by the method, has low maximum viscosity of the starch solution, both extremely reduced gelatinization starting temperature and gelatinization energy than those of a raw material and improved solubility.
