Abstract:
To provide a novel nucleic acid high content bread yeast which has excellent proliferation potency and contains nucleic acid by high content, therefore excellent in a taste or the like when being formed into a yeast extract, and a production method of a yeast extract using the same.SOLUTION: There are provided: a nucleic acid high content bread yeast in which, a nucleic acid amount of a bread yeast when being cultivated until a yeast density in a medium becomes 12 mass% is greater than 10 mass% for a dry bacterial cell mass; and a production method of a yeast extract including a step for cultivating the nucleic acid high content bread yeast and a step for preparing the extract from the cultivated bread yeast.SELECTED DRAWING: None
