Abstract:
To provide a method for producing oligosaccharide from β-glucan, without using an enzyme, at low cost, and in a manner of a reduced environmental load.SOLUTION: The present invention provides a method for producing oligosaccharide by applying hydrothermal treatment to a β-glucan-containing composition, or β-glucan. A temperature of hydrothermal treatment is preferably 120°C or more and 260°C or less. A degree of polymerization and/or yield of oligosaccharide is preferably optimized by controlling the temperature and time of hydrothermal treatment. The β-glucan is preferably β-1,3-1,6-glucan.SELECTED DRAWING: None
